2015 Shiraz 'The Demon'
The 2015 Shiraz had a small component of Viognier added at the crusher, de-stemmer and chilled to 14°C. After inoculation the cap was hand-plunged twice daily and temperatures were kept below 30°C during fermentation. After settling, all batches were kept in stainless steel tanks for malolactic fermentation and then racked to oak for maturation.
The wine was aged in 30% new, 50% one-year-old and 20% two-year-old French oak for 20 months maturation before being minimally filtered and bottled.
Intense, spicy, black plum and blueberry with an underlying floral lift and vanillin spice.
A dry, soft and round tannin structure with flavours of rich, ripe and plump black fruits that are carefully integrated and balanced with the fine French oak. A full-bodied wine with a medium to long savoury finish.
